WAYS TO "ICE CREAM" AROUND THE WORLD

We live in a global world in which we can move freely, discover countries with their cultures, traditions and typical plates. Many are the differences, one of them are types of ice creams. In this article you will find the elastic icecream from Turkey and funny balls from Japan.


Dondurma - Turkey




The special ice cream made in Turkey called Dondurma has a unique essence: it is chewy and thick and can be eaten with knife and work. It originates from Maras a town surrounded by goats and orchids. The elasticity is produced by the mix of these two ingredients: goat-milk and salep orchids (salep is a special name of Turkish flour made of orchids tubers). It takes 250 Kilos of orchids’ tubers to make 1 kilo of salep. Dondurma also contains mastic, and vegetable resin.




Take note: work with different ingredients allows you to create amazing products. You need patience and time to understand which is the best mixture, but it worth it.


Mochi Ice Cream - Japan




Let’s move to Japan. Very far from Western countries, it is a strange land for Europeans but also admired for its futuristic technology, traditions and lifestyle. It is common to consider Japan as the country where everything is possible, where imagination becomes reality. For instance here you are Mochi Ice cream. Mochi is a non-sweet rice paste which is used to cover the ice cream. The result are little balls. It isn’t sticky so it allows you to hold the mochi balls. It was invented by Japanese American business women who got inspiration by mochi, a typical rice cake.



Take note: you don’t have to be disruptive to be successful on the market. You can reinvent what already exists, in an original combination.


Kulfi - India





Invented during Mughal Empire in 16th century in India, it is similar to western icecream but with spicy flavors. Cardamom, saffron and pistachio are the most used. Kulfi ice cream is more dense because milk is cooked for hours until it doesn’t reduce its volume by half. Now they are served in conical shapes by originally they were put in particular matka pot.




Take note: research for tasty flavors using spices that you regularly would use in the kitchen.


Fried Ice Cream - China




Hailing from China, it is the most famous and typical dessert of the oriental cooking. The contrast between its hot crunchy crust and the soft cold interior, makes it perfect to complete a spicy oriental dinner. How to prepare it? First you need to roll your ice cream ball which will become the heart of this tasteful dessert. Remember that the trick which allows a good product is always the batter, realized only with flour, starch, powdered sugar, water and eggs. Cover your ball with the batter obtained in the previous step and put it in the freezer up until the mixture will be solidify. Next stage is the frying: open the freezer and immerse immediately your ball in the boiled oil. It will need just 20-30 seconds to become golden.


Take note: combine different techniques of the culinary world. Don’t be afraid to dare.


Ais Kacang - Malaysia




The ice cream variety found in Malaysia and Singapore is actually shaved ice topped with cooked red beans and evaporated milk. The topping varies but beans are the most used ingredients. Durian is the typical fruit it is preferred topping by locals.


Take note: maybe salty ingredients are the key for the perfect taste.

Sorbets - Philippines





It is usually serve with small sugar cones or wafer, and recently between bread buns. It is usually made from coconut milk or carabo’s (water buffalo) milk, unlike others that are made from cow’s milk. Popular flavors are avocado, melon, strawberry, cookies and cream , chocolate and cheese. They are sold from sorbeteros, street men with little carts.
