Nitrogen Ice cream

The peculiarity is due to the fact that the liquid nitrogen ice cream is made in real time. When the nitrogen comes into contact with the ice cream mixture, a white cloud is released and after few minutes your ice cream is ready! The immediacy of this production allows to create a particularly silky and fine ice cream structure with microcrystals 700 times smaller than traditional ice cream. Moreover, this production method allows the creation of a natural ice cream without emulsifiers and chemical additives, suitable also for allergic subjects. Liquid nitrogen is a gas that has no adverse health effects.

The oldest nitrogen ice cream was introduced in 1996 named Dippin Dots.  It exploits the innovative method to create little colorful freezing balls.



The latest offer in Italy comes from the famous coffee store Starbucks in Milan that proposes three different flavors in nitrogen way.

Never Melting Ice Cream: Astronaut

It is also known as astronaut ice cream or space ice cream, typically a slab of ready-to-eat dehydrated ice cream. Compared to regular ice cream, it can be kept at room temperature without melting and is more brittle and rigid but still soft when bitten into.
